Wash and peel the potatoes. Cut them into thin fry-shaped pieces.
If you prefer softer fries, boil the potato strips in salted water for about 5 minutes, then drain and let them cool slightly. If you like them crispy, skip this step.
On a baking sheet, toss the potato strips with olive oil, salt, black pepper, garlic powder, and paprika until well-coated.
Spread the seasoned potatoes evenly in a single layer on the baking sheet.
Bake in the preheated oven for about 25 minutes, flipping them halfway through, until golden brown and crispy.
Remove the fries from the oven and immediately sprinkle the shredded cheddar cheese evenly over the hot fries.
Return the baking sheet to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
Take the cheesy fries out of the oven and let them cool for a minute.
Serve hot, garnished with optional toppings like sour cream, green onions, and bacon bits if desired.
