Ingredients
  

  • 4 large russet potatoes About 2 lbs.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped green onions For garnish.
  • 1/4 cup sour cream Optional, for serving.

Instructions
 

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Wash and peel the russet potatoes. Cut them into thin fries (about 1/4 inch thick).
  • In a large mixing bowl, toss the fries with olive oil, garlic powder, paprika, salt, and black pepper until well coated.
  • Spread the seasoned fries in a single layer on the baking sheet.
  • Bake in the preheated oven for about 20 minutes, flipping them halfway through, until they are crispy and golden brown.
  • Remove the fries from the oven and sprinkle shredded cheddar cheese evenly over the top.
  • Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and garnish with chopped green onions.
  • Serve hot with sour cream on the side, if desired.

Notes

Feel free to customize your cheesy fries with other toppings, such as jalapeños, bacon bits, or your favorite hot sauce.
Make sure to adjust baking time depending on how crispy you like your fries. You can also use frozen fries for a quicker option; simply follow the package instructions for baking.
