- 4 medium russet potatoes About 2 pounds.
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 2 cups shredded cheese Cheddar or your choice.
- 1/4 cup green onions, sliced Optional.
