Equipment

  • 1 Large skillet
  • 1 Cutting board
  • 1 Measuring cups and spoons
  • 1 Grater
  • 4 Burrito-sized flour tortillas
  • 1 Aluminum foil (optional for wrapping)

Ingredients

  • 1 lb ground beef
  • 1 cup cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1 packet taco seasoning (about 1 oz)
  • 1/2 cup water
  • 1 cup cooked rice
  • 1 cup refried beans
  • 1/2 cup salsa
  • 4 large flour tortillas
  • Sour cream to taste for topping optional
  • Chopped green onions to taste for garnish optional

Instructions

  • In a large skillet, cook the ground beef over medium heat until browned, breaking it apart as it cooks for about 5-7 minutes.
  • Drain any excess fat from the beef, then return it to the skillet and add the taco seasoning and water. Stir well and let it simmer for about 5 minutes until the mixture thickens slightly.
  • Prepare your ingredients by shredding the cheeses, cooking the rice if not already done, and warming the refried beans in a separate pot.
  • To assemble the burritos, lay a tortilla flat and spread about 1/4 cup of refried beans down the center, followed by 1/4 cup of cooked rice, 1/4 cup of the beef mixture, 1/4 cup of salsa, and a generous handful of the shredded cheeses.
  • Fold the edges of the tortilla inward, then roll it tightly from the bottom up to completely enclose the filling.
  • If desired, wrap each burrito in aluminum foil for warmth and to keep everything together.
  • In the same skillet, place the rolled burritos seam-side down and toast them for about 2 minutes on each side or until golden brown and the cheese has melted.

Notes

Customize your burrito by adding ingredients like guacamole, jalapeños, or diced tomatoes.
To make it healthier, substitute ground beef with ground turkey or chicken, and use low-fat cheese.
Serve with extra salsa, sour cream, and fresh cilantro on the side for added flavor.
