- 1 box Jiffy Corn Muffin Mix (8.5 oz)
- 1 can whole kernel corn (15 oz, drained)
- 1 can cream-style corn (14.75 oz)
- 1 cup sour cream
- 1 cup shredded cheddar cheese 3/4 cup mixed in, 1/4 cup for topping.
- 1/2 cup melted butter
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Preheat the oven to 350°F (175°C).
In a mixing bowl, combine the Jiffy Corn Muffin Mix, whole kernel corn, cream-style corn, sour cream, melted butter, salt, and black pepper. Mix well until all ingredients are combined.
Stir in 3/4 cup of the shredded cheddar cheese, reserving the remaining 1/4 cup for topping.
Pour the mixture into a greased 9x13 inch baking dish and spread evenly.
Sprinkle the reserved cheddar cheese over the top of the casserole.
Bake in the preheated oven for 45 minutes or until the top is golden brown and the casserole is set.
