Ingredients
  

  • 2 cups cooked rice white or brown
  • 2 cups broccoli florets fresh or frozen
  • 1 pound boneless, skinless chicken breasts cubed
  • 2 cups shredded cheddar cheese divided
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon butter

Instructions
 

  • Heat olive oil and butter in a large skillet over medium heat. Add the cubed chicken breasts to the pan and season with garlic powder, onion powder, salt, and pepper. Sauté until the chicken is cooked through and golden brown, approximately 5-7 minutes.
  • Add the broccoli florets to the pan and pour in the chicken broth. Stir to combine, cover the skillet, and steam for about 5 minutes, or until the broccoli is tender.
  • Once the broccoli is cooked, add the cooked rice to the skillet and stir everything until well mixed.
  • Remove the skillet from the heat and sprinkle 1.5 cups of shredded cheddar cheese over the top. Cover the skillet again, allowing the cheese to melt for 2-3 minutes.
  • After the cheese has melted, give everything a good stir. Add the remaining half cup of cheddar cheese on top, cover once more, and let sit for another minute before serving.
  • Serve hot, and enjoy your cheesy broccoli chicken and rice!

Notes

Feel free to substitute the broccoli with other vegetables like spinach or peas if preferred.
This dish can be made ahead of time and reheated, making it a great option for meal prep.
