- 12 ounces fettuccine pasta
- 1/2 cup unsalted butter
- 2 cups heavy cream You can substitute half with low-fat milk for a lighter version.
- 1 1/2 cups grated Parmesan cheese Adjust for cheesier flavor as preferred.
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1/4 teaspoon black pepper
- salt to taste
- fresh parsley, chopped For garnish.
Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
In a skillet over medium heat, melt the unsalted butter. Add the minced garlic and sauté for about 1 minute until fragrant, stirring frequently.
Pour in the heavy cream and bring to a gentle simmer. Let it cook for 3-4 minutes, stirring occasionally.
Reduce the heat to low and gradually whisk in the grated Parmesan cheese until melted and smooth. Add the shredded mozzarella cheese and stir until fully incorporated.
Season the sauce with black pepper and salt to taste.
Add the cooked fettuccine to the cheese sauce, tossing to coat the pasta evenly. If the sauce is too thick, stir in a bit of the reserved pasta water until it reaches your desired consistency.
Serve immediately, garnished with chopped parsley.
You can add cooked chicken or shrimp for added protein.
For a lighter version, you can substitute half of the heavy cream with low-fat milk.
Adjust the amount of cheese according to your preference for a cheesier flavor.
