Ingredients
  

  • 1 pound ground beef
  • 1 medium onion, diced (about 1 cup)
  • 2 cloves garlic, minced
  • 1 medium carrot, diced (about 1 cup)
  • 1 medium bell pepper, diced (about 1 cup)
  • 4 cups beef broth
  • 2 cups potatoes, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • to taste none salt and pepper
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1/4 cup chopped green onions (for garnish)

Instructions
 

  • In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess grease.
  • Add the diced onion, minced garlic, carrot, and bell pepper to the pot. Sauté for about 5 minutes or until the vegetables soften.
  • Stir in the diced potatoes, beef broth, dried oregano, paprika, and season with salt and pepper. Bring the mixture to a boil.
  • Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the potatoes are tender.
  • Once the potatoes are cooked, stir in the heavy cream and shredded cheddar cheese. Mix until the cheese is melted and the soup is creamy.
  • Taste the soup and adjust the seasoning if necessary. If desired, garnish each bowl with chopped green onions before serving.
  • Feel free to customize the soup by adding other vegetables like celery or zucchini if preferred.
  • Store any leftovers in the fridge for up to 3 days and reheat on the stovetop or in the microwave.
