- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon ground cumin

Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes, or until translucent.
Stir in the grated ginger and ground cumin, cooking for an additional minute until fragrant.
Add the chopped carrots and vegetable broth to the pot. Bring to a boil, then reduce the heat and let simmer for about 20 minutes or until the carrots are tender.
Remove the pot from heat and allow it to cool slightly. Use a blender or immersion blender to puree the soup until smooth.
Return the blended soup to the pot, and season with salt and pepper to taste. If the soup is too thick, add a little more broth or water to reach desired consistency.
Serve hot, garnished with fresh cilantro and lime wedges if desired.
For a spicier kick, you can add a pinch of cayenne pepper or a small diced jalapeño while sautéing the onions.
