Ingredients
  

  • 1 lb beef stew meat, cut into 1-inch cubes
  • 4 cups beef broth
  • 2 cups cabbage, chopped
  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • to taste salt
  • to taste pepper
  • 1 tablespoon olive oil

Instructions
 

  • In a large pot or Dutch oven, heat the olive oil over medium heat.
  • Add the diced onions and garlic, cooking until the onions are translucent, about 3-4 minutes.
  • Add the beef stew meat to the pot, seasoning with salt and pepper. Cook until browned on all sides, about 5-7 minutes.
  • Stir in the sliced carrots, chopped celery, and chopped cabbage. Cook for another 3-4 minutes until the vegetables begin to soften.
  • Pour in the beef broth and diced tomatoes (with juices). Add Worcestershire sauce and dried thyme. Stir well to combine.
  • Bring the soup to a boil, then reduce heat to low. Cover and let it simmer for 30 minutes, stirring occasionally.
  • Taste and adjust seasoning if needed, adding more salt and pepper to preference.
  • Serve hot, ladled into bowls.

Notes

You can customize the soup by adding other vegetables like potatoes or green beans.
The soup can also be made in a slow cooker. Brown the beef first, then add all ingredients to the slow cooker and cook on low for 6-8 hours.
Leftovers can be stored in the fridge for up to 3 days and can also be frozen for later use.
