buffalo meatballs

These spicy and flavorful buffalo meatballs are perfect as an appetizer or main dish. Made with ground buffalo meat, they are lower in fat than traditional beef meatballs while still being tender and delicious.

Ingredients
  

  • 1 pound ground buffalo meat
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup buffalo sauce Plus extra for serving.
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper if desired for easier cleanup.
  • In a large mixing bowl, combine the ground buffalo meat, bread crumbs, Parmesan cheese, chopped parsley, buffalo sauce, egg, minced garlic, onion powder, salt, black pepper, and smoked paprika.
  • Mix the ingredients together using your hands or a spatula until well incorporated, being careful not to overmix.
  • Form the mixture into meatballs, about the size of golf balls, and place them on the baking sheet. Make sure there is space between each meatball.
  • Bake in the preheated oven for 15-20 minutes, or until the internal temperature of the meatballs reaches 160°F (70°C) and they are golden brown.
  • Remove the meatballs from the oven and drizzle with additional buffalo sauce, if desired.
  • Serve the buffalo meatballs with celery sticks and blue cheese or ranch dressing for dipping.

Adjust the spice level by adding more or less buffalo sauce according to your preference.
These meatballs can also be cooked in a skillet over medium heat if you prefer stovetop cooking. Adjust the cooking time accordingly.
