Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper if desired for easier cleanup.
In a large mixing bowl, combine the ground buffalo meat, bread crumbs, Parmesan cheese, chopped parsley, buffalo sauce, egg, minced garlic, onion powder, salt, black pepper, and smoked paprika.
Mix the ingredients together using your hands or a spatula until well incorporated, being careful not to overmix.
Form the mixture into meatballs, about the size of golf balls, and place them on the baking sheet. Make sure there is space between each meatball.
Bake in the preheated oven for 15-20 minutes, or until the internal temperature of the meatballs reaches 160°F (70°C) and they are golden brown.
Remove the meatballs from the oven and drizzle with additional buffalo sauce, if desired.
Serve the buffalo meatballs with celery sticks and blue cheese or ranch dressing for dipping.
