Dip each cauliflower floret into the batter, ensuring it's fully coated. Shake off any excess batter and place the florets on the prepared baking sheet.
Bake for 20 minutes until they start to become crispy and lightly browned.
While the cauliflower is baking, mix the buffalo sauce and olive oil in a separate bowl.
After 20 minutes, remove the cauliflower from the oven and carefully toss it in the buffalo sauce mixture until well coated.
Return the coated cauliflower to the baking sheet and bake for an additional 5 to 10 minutes, until the sauce is heated through and the edges are crispy.
Remove from the oven, allow to cool slightly, and serve with celery sticks, carrot sticks, and dressing on the side.
