- 2 cups heavy whipping cream, divided
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract

Begin by melting the chopped chocolate. You can do this using a microwave in 30-second intervals, stirring in between until smooth, or by using a double boiler. Allow the melted chocolate to cool slightly.
In a blender, combine 1 cup of heavy whipping cream, sugar, vanilla extract, and a pinch of salt. Blend on medium-high speed until soft peaks form, about 2-3 minutes.
Gently pour the melted chocolate into the whipped cream in the blender and blend again on low speed until fully combined and smooth.
Pour the chocolate mousse mixture into serving glasses or bowls, filling them about three-quarters full.
Cover with plastic wrap and refrigerate for at least 1 hour to set before serving.
Once set, top with additional whipped cream, chocolate shavings, or berries if desired, and serve chilled.
For a richer flavor, you can use dark chocolate.
If you want to add a hint of coffee flavor, consider adding 1 tablespoon of coffee liqueur or espresso to the chocolate mixture.
Make sure the chocolate is not hot when adding it to the whipped cream, as this will cause the mousse to deflate.
