Ingredients
  

  • 8 large jalapeños Slice in half and remove seeds for less heat if desired.
  • 1 cup canned refried beans
  • 1 cup cream cheese Softened.
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon paprika
  • to taste salt and pepper
  • optional fresh cilantro For garnish.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Carefully slice the jalapeños in half lengthwise and remove the seeds and membranes for less heat if desired.
  • In a mixing bowl, combine the refried beans, cream cheese, shredded cheddar cheese, garlic powder, onion powder, cumin, paprika, salt, and pepper. Mix until well combined.
  • Spoon the bean mixture into each jalapeño half, filling them generously.
  • Place the stuffed jalapeños on a baking sheet, arranged cut-side up.
  • Bake in the preheated oven for 20 minutes, or until the jalapeños are tender and the cheese is bubbly and golden.
  • Remove from the oven and let cool slightly before serving.
  • If desired, garnish with fresh cilantro before serving.

Notes

For an extra kick, you can leave some seeds in the jalapeños or add diced jalapeños to the filling.
Feel free to experiment with different types of cheese or beans to customize the filling to your liking.
Serve with tortilla chips or salsa for dipping.
