- 1 lb boneless, skinless chicken breasts
- 1 cup barbecue sauce
- 1 store-bought pizza dough pizza dough or homemade if preferred
- 1 ½ cups shredded mozzarella cheese
- ½ cup red onion, thinly sliced
- ½ cup corn, drained optional
- ¼ cup fresh cilantro, chopped optional
- Olive oil olive oil for grilling

Preheat the oven to 475°F (245°C) and place a pizza stone in the oven if using one.
Season the chicken breasts with salt and pepper. Grill or cook the chicken in a skillet over medium heat with a little olive oil for 6-7 minutes per side or until fully cooked. Remove from heat and let it rest for a few minutes.
