If using wooden skewers, soak them in water for at least 15 minutes to prevent burning. If using metal skewers, skip this step.
In a mixing bowl, combine the mayonnaise, sweet chili sauce, sriracha sauce, lime juice, garlic powder, salt, and black pepper. Mix until smooth and well combined. Set aside a few tablespoons of the sauce for dipping later.
Add the chicken pieces to the bowl with the sauce mixture, ensuring the chicken is well coated. Allow it to marinate for at least 15 minutes.
Preheat the grill or oven to medium-high heat (approximately 400°F/200°C).
Thread the marinated chicken pieces onto the skewers. Make sure to leave a little space between pieces for even cooking.
Brush the skewers lightly with olive oil to prevent sticking.
If grilling, place the skewers directly on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
If using the oven, place the skewers on a baking tray and bake for 15 minutes, flipping halfway through, until the chicken is cooked through.
Once cooked, remove the skewers from the heat and let them rest for a couple of minutes.
Serve the Bang Bang Chicken Skewers with the reserved dipping sauce and garnish with fresh cilantro if desired.
