Ingredients
  

  • 3 pieces ripe bananas, mashed Make sure your bananas are very ripe for the best flavor.
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/3 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts or chocolate chips Optional ingredient.

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease or line a muffin tin with paper liners.
  • In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, and melted butter. Mix until smooth.
  • Add the eggs and vanilla extract to the banana mixture and whisk until well incorporated.
  • In another bowl, whisk together the baking soda, salt, ground cinnamon, and flour.
  • Gradually add the dry ingredients to the banana mixture, stirring gently until just combined. Do not overmix.
  • If desired, fold in the chopped walnuts or chocolate chips.
  • Divide the batter evenly among the 12 muffin cups, filling each about 2/3 full.
  • Bake for about 20 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let the muffins cool in the pan for 5 minutes before transferring them to a cooling rack.
