Ingredients
  

  • 4 pieces bone-in pork chops about 1 inch thick
  • 8 strips bacon
  • 2 cups sliced mushrooms button or cremini
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 cup chicken broth
  • 1 tablespoon fresh parsley chopped, for garnish

Instructions
 

  • Season the pork chops with salt, black pepper, and dried thyme on both sides.
  • In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and place it on a plate lined with paper towels to drain excess fat. Leave about 1 tablespoon of bacon grease in the skillet.
  • In the same skillet, add olive oil, chopped onion, and sliced mushrooms. Sauté for about 5 minutes, or until the mushrooms are browned and the onion is translucent.
  • Add the minced garlic to the skillet and cook for an additional 1 minute, stirring continuously to prevent burning.
  • Push the mushroom mixture to the sides of the skillet, add the seasoned pork chops to the center, and sear for 3-4 minutes on each side until they are browned.
  • Pour the chicken broth into the skillet, bringing it to a simmer. Reduce heat to low, cover the skillet, and cook for an additional 10-12 minutes, or until the pork chops are cooked through (internal temperature should reach 145°F).
  • Once cooked, remove the pork chops from the skillet and allow them to rest on a plate. Stir in the chopped bacon into the mushroom sauce in the skillet.
  • Serve the pork chops topped with the mushroom-bacon sauce and garnish with fresh parsley.

Notes

For extra flavor, consider adding a splash of white wine to the mushroom sauce before adding the chicken broth.
Pair this dish with mashed potatoes or a green salad for a complete meal.
