  • 1 medium Gala apple cored and thinly sliced
  • 1/4 cup thinly sliced red onions
  • 3/4 cup walnut halves toasted and roughly chopped
  • 1/3 cup crumbled feta cheese
  • 1/3 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey or maple syrup
  • Kosher salt and fresh ground black pepper to taste

  • Chop the red leaf lettuce into bite-sized pieces, slice the Gala apple thinly, and prep the red onions. Toast the walnuts until fragrant and lightly browned.
  • In a large salad bowl, combine the lettuce, sliced apples, red onions, and toasted walnuts.
  • Whisk together olive oil, balsamic vinegar, Dijon mustard, honey, a pinch of kosher salt, and black pepper until smooth.
  • Drizzle the vinaigrette over the salad and toss gently. Use the pressure cooker on steam setting for 3-4 minutes with sealing ring in place, then do a natural release.
  • Top with crumbled feta cheese before serving.
