1 measuring spoons
1 spoon for mixing
- 4 cups fresh broccoli florets
- 1 cup shredded carrots
- 1/2 cup red onion, diced
- 1/2 cup raisins
- 1/2 cup sunflower seeds
- 1/2 cup cooked bacon, crumbled optional
- 1/2 cup mayonnaise
- 1/4 cup apple cider vinegar
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Wash the broccoli florets thoroughly and cut them into bite-sized pieces. Place them in a large mixing bowl.
Add the shredded carrots, diced red onion, raisins, sunflower seeds, and crumbled bacon (if using) to the bowl with the broccoli.
In a small mixing bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth and well combined.
Pour the dressing over the broccoli mixture in the large bowl. Mix well until all ingredients are coated with the dressing.
Taste and adjust seasoning if necessary. If you prefer it a bit sweeter, you can add more sugar to taste.
Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. This step is optional but highly recommended.
Serve chilled and enjoy!
This salad can be prepared a day in advance and stored in the refrigerator.
Feel free to add other ingredients like diced apples or cheese for a twist.
The bacon is optional for a vegetarian version; you can substitute it with roasted chickpeas for added crunch.
