Equipment

  • 1 air fryer
  • 1 mixing bowl
  • 1 baking sheet (optional)
  • 1 cutting board
  • 1 measuring cups
  • 1 measuring spoons
  • 1 tongs or spatula

Ingredients
  

  • 4 medium zucchinis About 1 pound.
  • 1 cup breadcrumbs Panko preferred.
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1 spray cooking spray Or olive oil spray.

Instructions
 

  • Preheat the air fryer to 400°F (200°C).
  • Wash and trim the ends of the zucchinis. Cut them into fry-shaped sticks, about 1/4 to 1/2 inch thick.
  • In a mixing bowl, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper. Mix well.
  • In another bowl, beat the eggs.
  • Dip each zucchini fry into the eggs, allowing excess to drip off, then coat with the breadcrumb mixture, pressing gently to adhere.
  • Arrange the coated zucchini fries in a single layer in the air fryer basket. Do not overcrowd; you may need to cook in batches.
  • Spray the fries lightly with cooking spray for extra crispiness.
  • Air fry the zucchini fries for about 12-15 minutes, shaking the basket halfway through for even cooking, until they are golden brown and crispy.
  • Remove from the air fryer and let cool for a couple of minutes before serving.

Notes

You can add different spices or herbs to the breadcrumb mixture for extra flavor.
Serve with your favorite dipping sauce, such as marinara or ranch dressing.
