Ingredients
  

  • 4 medium zucchinis About 1.5 lbs.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • to taste grated Parmesan cheese Optional, for garnish.

Instructions
 

  • Wash the zucchinis thoroughly. Cut off the ends and slice them into thin rounds, about ½ inch thick.
  • In a mixing bowl, combine the sliced zucchini with olive oil, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Toss until the zucchini is evenly coated with the seasonings.
  • Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  • Place the seasoned zucchini slices in a single layer in the air fryer basket. Depending on the size of your air fryer, you may need to do this in batches.
  • Cook the zucchini in the air fryer for 10-12 minutes, shaking the basket halfway through to ensure even cooking. The zucchini should be tender and slightly crispy on the outside.
  • Once done, remove the zucchini from the air fryer and transfer it to a serving plate. If desired, sprinkle with grated Parmesan cheese for added flavor.
  • Serve warm as a delightful side dish to your favorite main course.

Notes

For a spicier kick, add crushed red pepper flakes to the seasoning mix.
Fresh herbs like parsley or basil can be sprinkled on top for extra freshness.
Make sure not to overcrowd the air fryer basket, as this will prevent the zucchini from cooking evenly.
