Ingredients
  

  • 12 pieces egg roll wrappers
  • 2 cups coleslaw mix Shredded cabbage and carrots.
  • 1 cup cooked chicken Shredded (or tofu for a vegetarian option).
  • 2 pieces green onions Finely chopped.
  • 2 cloves garlic Minced.
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • to taste salt
  • to taste pepper
  • as needed non-stick cooking spray

Instructions
 

  • In a mixing bowl, combine the coleslaw mix, cooked chicken, green onions, garlic, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are integrated.
  • Lay one egg roll wrapper flat on a clean surface, with a corner pointing toward you. Spoon about 2 tablespoons of the filling onto the center of the wrapper.
  • Fold the bottom corner of the wrapper up over the filling, then fold in the sides and roll tightly. Moisten the top corner with water to seal. Repeat with remaining wrappers and filling.
  • Preheat your air fryer to 380°F (190°C) for about 5 minutes.
  • Lightly spray the air fryer basket with non-stick cooking spray. Place the egg rolls in the basket in a single layer, making sure they are not touching.
  • Spray the tops of the egg rolls lightly with more cooking spray. Cook in the air fryer for 10-12 minutes, flipping halfway through, until they are golden brown and crispy.
  • Remove the egg rolls from the air fryer and let them cool slightly before serving. Enjoy with your favorite dipping sauce, such as sweet and sour sauce or soy sauce.

Notes

You can customize the filling with other vegetables, meats, or spices to your liking.
Make sure not to overcrowd the air fryer basket for even cooking.
Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer for best results.
