In a mixing bowl, combine the coleslaw mix, cooked chicken, green onions, garlic, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are integrated.
Lay one egg roll wrapper flat on a clean surface, with a corner pointing toward you. Spoon about 2 tablespoons of the filling onto the center of the wrapper.
Fold the bottom corner of the wrapper up over the filling, then fold in the sides and roll tightly. Moisten the top corner with water to seal. Repeat with remaining wrappers and filling.
Preheat your air fryer to 380°F (190°C) for about 5 minutes.
Lightly spray the air fryer basket with non-stick cooking spray. Place the egg rolls in the basket in a single layer, making sure they are not touching.
Spray the tops of the egg rolls lightly with more cooking spray. Cook in the air fryer for 10-12 minutes, flipping halfway through, until they are golden brown and crispy.
