Ingredients
  

  • 4 large flour tortillas
  • 1 cup cooked shredded chicken (or beef)
  • 1 cup black beans drained and rinsed
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • salt and pepper to taste
  • Cooking spray or oil for spraying

Instructions
 

  • In a mixing bowl, combine the cooked shredded chicken, black beans, shredded cheese, chili powder, ground cumin, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  • Lay one flour tortilla flat on a clean surface. Spoon about ¼ of the filling mixture onto the center of the tortilla.
  • Fold the sides of the tortilla towards the center, then roll it up tightly from the bottom to the top, creating a burrito shape. Make sure the ends are tucked in.
  • Preheat the air fryer to 375°F (190°C) for about 5 minutes.
  • Lightly spray the outside of each chimichanga with cooking spray or brush with a small amount of oil.
  • Place the chimichangas in the air fryer basket, ensuring they are not overcrowded. Depending on the size of your air fryer, you may need to cook them in batches.
  • Cook the chimichangas in the air fryer for 10-12 minutes, turning halfway through the cooking time, until they are golden brown and crispy.
  • Carefully remove the chimichangas from the air fryer using tongs and let them cool slightly before serving.
  • Serve warm with your favorite toppings such as salsa, guacamole, sour cream, or shredded lettuce.

Notes

For a vegetarian option, substitute the meat with more beans or vegetables like sautéed bell peppers and onions.
You can store any leftover chimichangas in plastic wrap or foil and reheat them in the air fryer for 5 minutes at 350°F (175°C).
Feel free to customize the fillings based on your preferences, such as adding corn, jalapeños, or different types of cheese.
