- 1 lb fresh chestnuts
- 1 tablespoon olive oil
- pinch none salt optional
Rinse the chestnuts under cold water and pat them dry with a towel.
Using a sharp knife, make a shallow 'X' incision on the flat side of each chestnut.
Place the chestnuts in a bowl and drizzle with olive oil. Toss to coat them evenly.
