Ingredients
  

  • 1 pound ground beef lean
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 bell pepper bell pepper diced
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon fresh ginger minced
  • 1 teaspoon red pepper flakes optional
  • 1 head iceberg or butter lettuce leaves separated
  • 1 carrot carrot shredded
  • 1 green onion green onion sliced
  • to taste fresh cilantro for garnish

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add diced onion and sauté until translucent, about 3 minutes.
  • Add minced garlic and ginger, cooking for an additional minute until fragrant.
  • Increase the heat to medium-high and add the ground beef, breaking it up with a spatula. Cook until browned, about 5 minutes.
  • Drain any excess fat from the beef if necessary.
  • Stir in the bell pepper, soy sauce, hoisin sauce, sesame oil, rice vinegar, and red pepper flakes. Cook for another 2-3 minutes until the bell pepper is tender and flavors meld together.
  • To serve, spoon the beef mixture into the lettuce leaves. Top with shredded carrot and sliced green onions. Garnish with fresh cilantro.

Notes

Feel free to customize the filling with other vegetables such as zucchini or mushrooms.
These wraps can be served with a side of brown rice or quinoa for a more filling meal.
